Erkuai (耳块; pinyin: ĕrkuāi) is a type of rice cake particular to the Yunnan Province. The name literally means "ear piece," a reference to the shape of one of its common forms.


A local culinary specialty made of processed, cooked, compressed rice. Erkuai can be boiled, stir-fried (see below, centre), or barbequed when it usually comes in the form of a circular disc. Another popular manifestation is ersi, finely shredded erkuai in a noodle soup. They often served stir-fried with vegetables, spicy ingredients, fiery sauce of dried red chili, peppercorn, and salt, etc.




You will find them grilled and rolled around fried bread stick liked local breakfast from street booths. They look like rolled-up snacks.
